Hook'em Horns!

Weekend before last, Mark and I took a little trip to Waco to meet up with Josh and Emily and go to the Texas vs. Baylor game. We went to Temple the night before to visit and spend the night with Eunice, Mark's mom. Mark and his mom before we left to go to the game.
Here we all are...excited and ready to see the Longhorns play!

Josh and Emily with the players (behind them) warming up before the game. Game time was 11:00, but we got there at 9:00 so we could see the guys warm up....



Especially this guy!!!!!!!!!!!!!!!!! We are BIG COlt McCoy fans and it was so much fun watching him play and being so close to the field. We were only 6 rows up!

After the big WIN, we went out to eat with Mark's mom, sister, nephew and wife , and their precious children, Elijah and Sadie. Here is Emily holding her 2nd cousins, Elijah and Sadie. I would have had more pics of the fam to post , but after about 20 pictures of Colt McCoy, my battery died!!! Anyway, it was a great day for Texas football at its best!!!!!!

Pumpkin Delight!

This is a dessert that many of you have asked me to post on my blog. It is a great alternative to pumpkin pie and serves a lot more people than a regular pie. No crust and so easy. A real treat to have at Thanksgiving or any fall event! So, here we go!!!!

Pumpkin Delight!

1-16 oz. can of pure pumpkin
1-12 oz. can of evaporated milk
1 cup sugar
3 eggs
1 1/2 tsp. pumpkin pie spice
1 tsp. cinnamon
1 1/2 tsp. salt

Using mixer, mix together all of the above ingredients and pour into a 9x13 ungreased, pyrex dish OR fill baking cups 2/3 full. Top with:

2 cups yellow cake mix (not the kind with pudding) sifted evenly over the pumpkin mixture.
1 stick butter, melted and drizzled over cake mix
1 cup of chopped pecan pieces sprinkled on top

Bake at 350 for 50-55 minutes, until slightly firm. Chill overnight,serve cold and top with whipped topping.
